Second Breakfast: The Most Important Meal of the Day

I'm not one to be controlled by my constant appetite but... Wait, I totally am. Y'all, especially when I'm pregnant, I'm SO prone to get completely and totally hangry if I don't get enough to eat. I've found that the best way to control this is to put myself on a fairly strict schedule of what to eat when, particularly when it comes to the first two meals of the day.

That's right: Breakfast and Second Breakfast.


So I've gotten into the rhythm of starting the day with a quick breakfast of coffee and cereal (I know, say what you will about processed foods, but frosted wheat squares fill me up like nothing else!), then making myself an egg sandwich for second breakfast a couple hours later. It's been working pretty well, but lately it's been soooo hard to actually make it without snapping at the kids!

The toddler needs a cheese stick, then all the OTHER kids need cheese sticks, then they'd each like a slice of cheese, then they want crackers, banana chips, an apple cut up... You name it, they're suddenly STARVING for it because Mom's in the kitchen, which means it's time to get your orders in, right?


And I try to limit myself to once a week in the fast food drive-through, although I would eat those delicious breakfast sandwiches multiple times a day if I could. Which is why I was really excited to see these Jimmy Dean Bacon, Egg & Cheese sandwiches in the freezer section at Martin's Food Stores! I had a feeling this would be a game changer and... It was!


Instead of running around like a crazy person trying to throw food at the kids so that I can make something for myself, I can just wrap one of these in foil, pop it in the oven, go about my business, and 20 minutes later (about how long it was taking me to make my sandwich by hand before, what with all the interruptions), my delicious biscuit is ready!

It also only takes 3 minutes to microwave, but we don't have a microwave and I prefer the taste of oven-baked food anyway.


And the BEST part (aside from it being totally delicious and filling) is that once it's ready, I can leave it to cool for a minute, get all the kids something to eat, and they're engrossed enough in their own meal that they leave me alone to eat mine in peace!!!

I'm telling you, these are becoming a part of the regular rotation around here. So good! And do you see those three sources of protein in one sandwich? It's a pregnant woman's dream! And when you're pregnant for the fifth time like me, you know how important protein is.


Since I had a couple kids with me on our trip to Martin's Food Stores, I had to pick something up for them as well... Twist my arm, they chose bacon! I always have a tough time deciding what type to buy and usually go with whatever's cheapest, but we were going Jimmy Dean and their options of Applewood Smoked and Hickory Smoked were both so tempting... The kids chose Applewood, and I stood by their decision. 


Usually I'm too exhausted in the morning to make anything that involves more than just using the toaster, but we had a magical Sunday morning where the boys slept REALLY late and we didn't have to be anywhere early, so I actually made a hot breakfast!


The bacon slices are nice and thick, and they baked up in the oven in about 20 minutes while I made eggs and toast for everyone. I really appreciated that they were actually consistently the same size slice - nothing's worse than having different sizes, because you end up with half of it burned and half of it undercooked. And nobody ever says no to bacon, but they all devoured this and asked for more! 


Peter didn't even want to put down his bacon to eat anything else!
