1/52: King Cake

Thursday, January 21, 2021

This is all I have. I know!! I think there was too much cooking and baking going on, and the house was such a mess post-Christmas that I just didn't have any desire to take pictures when there was delicious food to be eaten. I *did* memorialize this beautiful King Cake that I made for Epiphany, though. It was quite tasty!

I have used this recipe the last couple of years, and it is delicious even though I completely change up the filling (no bananas ever, please! I do an apple-cinnamon-cream-cheese filling instead, and it needs at least 10 minutes of extra bake time, in my opinion). I must tell you, though, that it makes an absolutely ENORMOUS King Cake, so plan on either halving the recipe, feeding a huge crowd, or dividing the dough in half and baking two separate cakes. The latter is my preference, since I make one that we eat on Epiphany and the other gets eaten on Mardi Gras, which is coming up!

Truly it's basically a giant cinnamon roll... A brioche dough + whatever filling you want? You can't possibly go wrong. Just looking at this picture makes me want to dig the second cake out of the freezer!
