Just Because: Volume 5

Monday, February 15, 2021

Happy Monday, and happy almost-Lent! Our weather lately has felt sufficiently Lenten, so I think we're all ready for simple meals, praying the Stations of the Cross, and adding some extra sacrifices to our days.

I'm working on a second volume of my ever-popular meatless meals for Lent post and would love to see your suggestions in the comments to give me some inspiration! I've got a couple recipes I really need to get written down to share with you all, because we've added some staples to our repertoire since I wrote that first post back in 2014.

I only blogged once this past week, about an interesting craft and our new house plant... Riveting content, I know!! This week should bring a few posts, since Lucy turns two on Friday, and my friend Katie wrote a lovely book, of which I have an extra copy to give away. Looking forward to seeing what you written!

Challenge yourself to post *once* (or more!) every week, and spend a little time visiting other blogs too—it's more fun blogging when you know someone's reading it besides you, after all. I'll post this linkup every Monday morning for at least the next month or two, and we'll see if this makes old fashioned blogging a little more enjoyable for us all!

Make sure to link back to *this post* so your readers have a chance to discover some new blogs, as well! And feel free to use this image for your post if you need one! (Please be sure to link to an individual post, not just your blog in general.)

  1. This is one of our favorite meatless meals (but I use the recipe from vegetarian cooking for everyone . . .very similar to this one) https://www.allrecipes.com/recipe/49353/lentils-and-rice-with-fried-onions-mujadarrah/

    1. I want to try this!! Maybe for lunches, my husband doesn't like lentils or onions but I love both!

  2. This is one my family's favorites as of late: https://rainbowplantlife.com/vegan-red-lentil-curry/?rq=red%20lentils. I sub jalapeños for the serrano peppers and omit the almond butter.

  5. Would love to get some ideas of meatless meals for Lent. Last year it seems like we subsisted on cheese pizza and macaroni and cheese on Fridays. LOL

  6. Spinach quiche for the grown-ups is our go-to when we need a break from fish and tater tots.

  7. It's either cheese pizza or potato soup for Friday here. Or frozen fish. I was thinking today that I should make a list and prep for a couple Fridays in a row to mix it up. I need big family favorite ideas for sure!
